In Dr. Terry Wahls book, The Wahls Protocol: How I Beat Progressive MS Using Paleo Principles and Functional Medicine, she explains how she was in a wheelchair within two years of her original diagnosis of multiple sclerosis following all of the traditional western medicine treatments for her multiple sclerosis. She decided to try and find other ways to aid in her treatment, and so her research was vast and personal. Wahls was successful in healing through food, exercise, and stress management and now shares her inspirational story with others.
Here is an excerpt focused on sulfur-rich vegetables that, as Dr. Wahls explains, are very important for healthy connective tissue:
“Sulfur-rich foods nourish cells and mitochondria, and specifically help the body to be more efficient in eliminating toxins. Sulfur is also important for synthesizing protein and for producing collagen, which makes up all your connective tissues. If you have joint issues, you need sulfur! It also helps give you strong, beautiful skin, hair, and nails. Diets containing sulfur have been associated with improvement in skin disorders and arthritis. Many arthritis sufferers take a supplement called MSM (methylsulfonylmethane) to help with joint pain, but I like to get my sulfur on my dinner plate, so it comes in its natural and complete package.”
Examples of sulfur-rich foods include:
- Cruciferous vegetables such as Bok choy, broccoli, Brussel sprouts, cabbage, cauliflower, collard greens, kale, radishes, rutabaga,
- Allium vegetables such as leeks, onions, chives, garlic, scallions, and shallots
- Poultry and fish
- Nuts and seeds
- Legumes such as lentils and chickpeas
